Now that the weather is improving and we’re tiptoeing into summer, instead of buying coleslaw why not make your own?
Here’s my recipe –
1/2 white cabbage (medium sized) – finely sliced
2 spring onions – finely sliced
2 small carrots – grated
salt & pepper
Juice of 1/2 lemon
1 tbsp light mayo
1 tbsp plain yogurt – low fat
- Mix the cabbage, spring onions, carrots and sultanas together in a large bowl.
- In an another bowl mix the mayo, yogurt and lemon juice together and add a pinch of salt and pepper.
- Now mix all together.
- This will keep in the fridge for upto 3 days.
Enjoy this with a burger, salad or on top of a baked potato!?
